Crispy Oven Fried Chicken

Not all fried chicken's should be put in the penalty box - this one tastes excellent but is actually good for you.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Add 1/2 teaspoon of poultry seasoning to milk.
  3. Combine all other spices with cornflake crumbs and place in plastic bag.
  4. Wash chicken and pat dry. Dip chicken into milk, shake to remove excess, then quickly shake in bag with seasoning and crumbs.
  5. Refrigerate for 1 hour.
  6. Remove from refrigerator and sprinkle lightly with paprika for color.
  7. Evenly space chicken on greased baking pan.
  8. Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an added 30–40 minutes or until meat can be easily pulled away from bone with fork. Drumsticks may require less baking time than breasts. (Do not turn chicken during baking.) Crumbs will form crispy "skin."

Calories would be much higher for any decent sized serving. I just calculated this using only boneless skinless chicken breasts and came up with over 400 calories per 5 oz serving.

Super great recipe. Even though I didn't add the hot pepper I still got complaints that it was still too peppery. So next time I thing I will only do one tbsp of black pepper. Otherwise the recipe was great. Putting the aluminum foil on, really keeps the chicken moist and tender. I didn't even cook it the extra 30 min with the foil off (just because of time) and it still came out great!

Scrummy, instead of using cornflakes I used bran flakes. Have to admit I didn't use all the spices listed but it was still nice. Served I with roasted butternut squash. Thnks for posting this recipe ronny :)

One serving is defined as? 1 piece? 1 leg and i breast? want to try it, but need to know that info please.

For Atlins, change the cereal to mashed up pork rinds, the oil to olive oil, and the buttermilk to cream with some water. Then it will be less caloric and low carb.

What's the serving size on this in grams or ounces? "Serving size 1 serving" is not very helpful information for me.

Due to the 8g of carbs per serving (as well as the cereal) I would not recommend this for the Induction Phase, but excellent for the next phase. I would also recommend switching the vegetable oil with a grapeseed oil - it is better for you overall.
