Baked Malt Granola Bar

Flexible ingredients and can have baked or raw to taste.

Directions

  1. Heat oven to bake at 160°C, and line an ovenproof slice dish.
  2. Roughly chop nuts. Mix all the dry ingredients together in a large bowl. NB: you can do any combination of fruits, nuts and seeds that you like, providing they amount to 2&1/2 cups.
  3. Place wet ingredients into a small pot on medium heat. Bring to a boil and turn down heat to simmer for 1 minute.
  4. Thoroughly mix wet and dry ingredients together.
  5. Add mix to lined dish and press. Good idea to place baking paper on top and press with a large metal spoon. You want it compacted.
  6. Bake in oven for 20-25 minutes. Place in fridge and allow to cool for 1 hour before cutting.
  7. If you would rather have the fruit and nuts raw. Simmer the wet ingredients over a low heat until caramelised. Then mix wet and dry together, press into dish and refrigerate. The caramelisation will stop the slice from crumbling.
