Fasted 20 hours. Had "Mexiterranean fusion" aka leftovers. Beef and bean enchilada with homemade sauce, Spanish cauliflower rice, a little salad and a piece of spanakopita.

Me too, Wifey! I couldn't find phyllo so I used puff pastry. It was so much easier. Will do it this way from now on!

I have a friend who uses that term, but she's Greek and hubby is Mexican. They both cook. I love them.
