Lunch: veggie cups I combine broccoli sweet potatoes black beans bake in little muffin cups Parmesan on top. Side of avocado have a wonderful day everybody😊

I forgot this one had mushrooms and onions too. I make these with whatever I have in the house carrots make 12 and freeze.

I just shred up a head of broccoli and mix an egg and nutritional yeast in the broccoli. Then I just make the broccoli as my cup liners. Then I just roast up veggies sweet potato’s asparagus green beans carrots black beans what ever you have or want. Stuff the mixed veggies in the broccoli cups top with Parmesan. Cheese or any kind you want. Back in the oven for 30min😊
