Ok, very excited to report that I am cooking up a storm today! I made a vegan substitute for ground beef and it is delicious! I added soy sauce, hot sauce and cabbage and made some chinese dumplings with the vegan wrappers I have, and then I also made broiled meatballs with the mix adding mashed chickpeas. Been tasting things along the way and I am very happy with these items!
My friend is making a chicken pattie substitute and we are going to do an exchange so I made the recipe and divided it up, so now I have meatballs, dumplings, and ground substitute to bring over to her house and will get tofu/seitan patties.
I feel better today, like this vegan February might be pretty exciting.

Being vegan is an easy way to lose weight, so long as you go light on the nuts (though that’s true for any diet!).
