Usually, when I make Chicken Vegetable Soup, I completely FILL my 22-quart Stock Pot with mostly fresh ingredients. This time, I took a shortcut - used 2 bags of "frozen soup vegetables," 1 can of Shoepeg Corn, 1 can LeSueur Peas, a can of Rotel Tomatoes w/Green Peppers, a package of frozen Riced Cauliflower with Roasted Garlic, Swanson Chicken Broth, and only 8 chicken thighs (instead of the giant Sam's Club package). Still, this "cheaty" recipe made 24 cups of soup! A one-cup serving is only 93 Calories, 1.7g Fiber, 7.66 Net Carbs and 3.16g Fat. Great on these sub-freezing winter days!

If I have made too much soup, I decant it into paper cups and whack them in the freezer. Perfect 200ml portions as and when you need them :D

Good idea, @LowCarbFemmeFit! Unfortunately, with this "small" 24-cup batch, and two other adults in the house and one more downstairs, there won't BE any leftovers! Dang, that reminds me that the one downstairs is gonna want Chicken 'N Dumplins for his birthday in two days! Family recipe passed down for generations. SOOO yummy, but SO very CARBY! Maybe I can fit 1/4 cup into my macros that day!
