Wooo. This was so good. Slow cooked beef with soy and sweet and sour.

Liv001 being in ketosis, i need my salt! Home cooked meals have almost no salt if you don't add it. I've got low blood pressure and my heart condition actually does better with salt. My doc wants me to get 5000 mg . I was like ummm not gonna happen, that's too salty. When I wake up i have to take salt and potassium to start my day. Fun ehh! It was really good. I just didn't add salt and got my salt from the soy.

STORMGIRL, I WAS missing my Chinese food and thought, hmmm , sweet and sour dipping sauce with Soy Sauce, BINGO WOW! HAAA, all it needed was the stir fried broccoli and onions.

Concarne~ what canned meats..like chicken and tuna? Did you watch the latest Top Chef episode?.. where canned meats were part of a chef challenge. I find myself (strangely) w/out a slow cooker at the moment; when I come across the right rump roast (size and quality) I’m going to cook it in a Dutch oven (in the oven)..in my whole life I’ve only cooked roasts in crockpots. I’ve read some guidance in a Dutch oven focused blog, but any tips here are welcome 🙏

I don't eat any canned meats. Maybe sold white tuna from time to time. Canned meats. Yuck. So, i got my slow cooker for $10 at a garage sale. I see no reason you can't just use your dutch oven. Wish i had one of those.

Hey Cici-HappyTracking! No, I didn't see Top Chef. I should look it up. It may give me some new ideas. I bought some tuna in water and salmon. I wanted to buy more, but everything I looked at had something added that I didn't want to eat, e.g.: vegetable broth (oxalates) and sugar or seed oils. I'm a bit of a prepper, so I just wanted to add to my pantry of foods that I can eat. I think that I am going to have to can some beef and other proteins, so that I can control the quality of the meat and what goes into it. JenJabba is right. I love my 7 quart-size Dutch Oven. It's so versatile and produces wonderful meals. Here's a recipe that I pulled. I don't include red wine or veggies. However, I do add additional beef stock to replace the red wine. You can add or leave out whatever you'd like. I hoped it helps. :)) Dutch Oven Chuck Roast Easy Dutch Oven Chuck Roast Prep Time 20 minutes Cook Time 3 hours Servings 6 Ingredients 1 chuck roast about 3-4 pounds 2 tablespoons rendered beef fat or bacon grease Salt and black pepper to taste 1 teaspoon garlic powder (optional) 1 teaspoon onion powder (optional) 1 teaspoon paprika (optional) 1 teaspoon dried thyme (optional) 1 teaspoon dried rosemary (optional) 1 cup beef broth or beef stock 1 cup red wine (optional) 4 carrots peeled and chopped into chunks (optional) 4 potatoes peeled and diced (optional) 2 onions quartered (optional) 3 cloves garlic minced (optional) Instructions Prepping the Chuck Roast Preheat your oven to 325°F (163°C). Mix garlic powder, onion powder, paprika, thyme, rosemary, salt, and pepper in a bowl. Rub the chuck roast generously with the seasoning mix. Let it rest before searing for at least 30 minutes to marinate with the seasoning. I just salt it well and leave out all the other seasonings. Heat rendered fat or bacon grease in the Dutch Oven over medium-high heat. Sear the chuck roast on all sides until it develops a beautiful golden-brown crust. Set aside. The Veggie Tango (optional) In the same Dutch Oven, toss in carrots, potatoes, onions, and minced garlic. Season with salt and pepper to taste. Let them dance around for a couple of minutes, soaking up the flavors left by the roast. The Magic Potion Pour in the beef broth/stock and red wine (if using) into the Dutch Oven. Bring the liquid to a simmer, scraping up any flavorful bits stuck to the bottom. The Slow Cook Waltz Gently nestle the seared chuck roast back into the Dutch Oven, amidst the veggies and liquid. Put the lid on and transfer the Dutch Oven into the preheated oven. Oven Alchemy Allow the chuck roast to slow-cook in the oven for approximately 2.5 to 3 hours. Check for tenderness with a fork; it should easily shred. The Grand Finale Carefully remove the Dutch Oven from the oven. Transfer the chuck roast to a cutting board and let it rest for a few minutes. Shred or slice the roast into thick, juicy portions.

Hey, y’all~ thanks Jenjabba for letting us chitchat on your journal.. and THANK YOU Concarne for the recipe! I’ve saved it (it took me three scrolling screenshots to get it all)… and I’ll just look no further and go with it when I cook the Dutch oven roast. The recipe looks a lot like what I’ve settled on in my go-to slow cooker method..I do prefer red wine.. and getting as much sauce as I can from the finished roast- because it’s so good on many meats; I freeze extra, don’t waste a drop. Personally I’ve found that veggies in the pot detract from roast / gravy flavor- I omit (besides garlic, black garlic) and focus on spices. The oven cooking instructions you shared will be most helpful..I’d before imagined that the oven would need to be on all day for a roast. Maybe I’ll end up preferring the Dutch oven method. I’ll let you know how it goes. Really, thanks again!

Cici, can't wait to hear how it comes out. I don't use veggies in it either. Feels like a waste of money and I can't taste the difference.
