Debbie Cousins's Journal, 22 Nov 23

Happy Day-Before-Thanksgiving! Sorry I haven't posted much lately. I'll make up for it now. I'm typing in the website, instead of the app, so I'm not typing blind after a couple paragraphs. SO, first, I'm doing well after having to have a molar extracted last Thursday. I'm not exactly following the post-operative instructions, but I haven't had any problems, thank the Lord. By chewing on the non-surgical side, and being especially careful to not let ANY food drift to the other side of my mouth, nothing has lodged in the socket.

Here's what I'm making for tomorrow. I've already done two Rum Cakes (one with nuts on top and one without), 2 Blueberry Salads (done same way), a double batch of Watergate Salad and Turkey #1 just came out of the oven (it will be sliced and given as leftovers tomorrow). We'll cook #2 in the morning. Still to cook tomorrow are Turkey #2, about a half gallon of Turkey Gravy, my biggest bowl of Mashed Potatoes, a Sweet Potato Casserole, and a double batch of Broccoli Casserole. I was going to attempt to make Chocolate Meringue pies, but it's raining today, and meringue doesn't do well in high humidity.

Here's what everybody else is making: My mother-in-law: a Pecan Pie, a Buttermilk Pie, Sister Schubert Rolls and sliced Cranberry sauce. My sister-in-law: Macaroni & Cheese, Green Bean Casserole, Amaretto Yams, Butter Beans, Chocolate Chess Pie and Apple-Raisin Cake. My niece: Corn Pudding and Deviled Eggs. My daughter, Pasta Salad. My son: the Stuffing.

I'm not going to eat any Buttermilk Pie, rolls, Cranberry sauce, Butter Beans, Chocolate Chess Pie, Apple-Raisin Cake, Deviled Eggs or Pasta Salad, and not going to take home any of those things as leftovers.

Even though my calorie intake has averaged 1,700 one week, 1,900 one week, and over 2,000 two weeks, in the last four weeks, I've lost 1.2 pounds for each of three of the weeks and 1.6 pounds this past week. That's all with greatly reduced walking and no PT exercise (because my back has been hurting - going to the doctor about that this morning)

I'd love to hear what everyone else is having tomorrow! Did I mention we will have 18 people now. Thankfully, my mother-in-law's has a Florida room that is big enough to accommodate everybody!

You're tempting me to bake a pecan pie 😋 I usually make maybe one or two a year. Found a vegan recipe for one. Although I also have a cooked butternut squash in the fridge that I'm wondering if I could use for a pie instead of pumpkin or sweet potato

I'm wondering what a buttermilk pie is, the filling?

Fritzy, yes, it has buttermilk in the filling, but I don’t know what else is it in - I’ve never tried it. Writingwyo, oh no! I don’t mean to tempt you. I’m only going to have about 1/3 of a slice. Mountainman2, WOW! Thanks for sharing! I can’t imagine not getting all my ingredients from a store! You’re quite self-sufficient.

Happy Thanksgiving. Since there are only 2 of us and we don't eat as much as we used to, I will not make as many dishes. Turkey, apple and prune dressing, mashed potatoes, gravy, 1 baked yam for me, raspberry shortcake (made with homemade shortcake/biscuits with only 1 teaspoon sugar each) and maybe a pumpkin custard (low sugar). My husband may still want a small green salad. We usually have a big one every day. I got my turkey for 79 cents a pound at Ralphs. I slow-cooked a whole pork picnic shoulder in the oven yesterday. More than we needed. Hope your knee holds out for all your cooking and preparing. I've had severe shooting pains in my back for a week.

It doesn't take much to tempt me to bake a pie, Debbie 😂 I was probably going to bake one at some point this weekend anyway. A friend taught me a good pie crust recipe years ago, and I've never looked back!

Mission accomplished: pie baked. Posted it on my profile. 😂 Didn't go for pecan, though

Snowwhite100, thanks for sharing your Thanksgiving menu with me. That’s still a lot of food for just two people! I hope that all that food preparation won’t make your sciatica any worse! Sorry that it has been glaring up so badly. I did as much of the cooking before Thursday, but was still on my feet (and knee) for about 12 hours from 1:30am on. Thankfully, my knee wasn’t an issue, and it’s not hurting today (Friday) either, PTL. I did have a real problem with my back, though. I ended up taking too many muscle relaxers and pain pills, and had a pretty bad health scare because of it. Did not have to go to the ER , but if the symptoms had lingered much longer, I would have gone to the ER.

Buttermilk pie is a custard pie, made with buttermilk, eggs, butter, sugar, f!our, a little lemon juice, nutmeg & vanilla. Similar to Chess pie, which is made with whole milk instead of buttermilk.

Sounds lovely Debbie.

Thanks Shirfleur 1. That sounds just like what my mother-in-law makes. I need to learn how to make her Pecan Pie. She’s 85, and her health has just started declining. I wish I had taken the time to watch Nanny Woods (HER mother) make homemade Yeast Rolls before she passed on. She didn’t measure anything, though, and I thought I would never catch on. We all really miss those rolls, and the recipe died with her.
