Chicken Stuffed with Broccoli Rice Au Gratin

A delicious way to jazz up a boring chicken breast.

Ingredients

Directions

  1. Place chicken breast in a freezer bag. Remove the air and seal, then lightly pound chicken breast until thin.
  2. Lay out the chicken breast on plastic wrap and season with a sprinkle of sea salt and pepper.
  3. Put two tablespoons of pre-cooked cheesy rice and broccoli mix inside the middle of the chicken breast.
  4. Place the half slice of American cheese on top of the cheesy rice and broccoli mix.
  5. Roll the chicken breast tightly and tuck the sides in and stick toothpicks in them to keep it tight.
  6. Place gently into a lightly sprayed casserole baking dish.
  7. Bake at pre-heated 350 °F (175 °C) oven for about 25 minutes, depending on the thickness of the breast.
  8. Remove from the oven and spray tops of chicken lightly with olive oil spray, then replace the chicken and broil for approximately 10 minutes or until golden brown. Can be served whole, or sliced. It makes a beautiful presentation when sliced in 2 inch slices and served on a thin layer of buttered rice.

You almost had me until you mentioned 'American Cheese'. It's not cheese and it's disgusting.

Yes this is wrong Recalculated the numbers and its more like 246 Calories For one serving and thats with 4oz breast 1/4 cup rice and a 1/2 slice of cheese and one spray of Olive oil

I cal bull**** on this one. Plus, a breast alone has way more than 6 g of protein (more like 20)

I would have to agree. There is no way this yummy looking recipe is only 84 calories a serving.

Something is wrong here with the calories and fat. This has cheese (fat free ?) and a chicken breast and rice/broccoli mix. These alone don't seem right. Says it serves 6 but only uses a total of 1/2 slice of cheese? Probably this is "per breast" but total ingredients needed is wrong. Everything except the breasts is geared for one serving. Not sure this is right. Think I won't try.
