Welsh Cakes

Ingredients

Directions

  1. Mix flour, sugar, spices, baking powder, and salt in a bowl.
  2. Cut 100g butter into small pieces and rub into flour mixture with hands until crumbly.
  3. Mix in the currants.
  4. Add the egg and mix until you have a soft dough.
  5. Roll out dough onto a floured surface to the thickness of a little finger. Cut out rounds.
  6. Melt the remaining butter in a pan on medium heat. Cook for 3 minutes on each side until golden brown and cooked through.
