Curried Aubergine in Coconut Milk
Nice tasty main meal or lunch.
Ingredients
Directions
- Cut aubergine into chunks and slice onion.
- Fry the onion in a fry pan with a little coconut oil.
- Microwave the aubergine while you fry the onion.
- Fry off the curry, add the flour and cook for 1 minute
- Add the coconut milk then the cooked aubergine.
- Adjust the seasoning.
- Note: try adding chicken.
